Midwest Living: You've Probably Never Heard of This Wisconsin Town—Here's Why It's Worth a Visit

An easy day trip or overnight from Milwaukee, the riverside hamlet of Princeton is enjoying a revival, thanks to an inspired new hotel, a French-inspired bakery and a restaurant with artistic fixings.

A native son of Princeton, Matt Trotter launched a design career in Chicago. After pivoting to Sheboygan, he has found himself back in his hometown. Lucky for all of us, he’s parlayed his well-trained eye into Horseradish Kitchen and Market. (Beet sandwich with pistachio goat cheese? Don’t mind if I do.) Enjoy a bite and a limoncello at the bar, or perch by the fire as you tuck into a salad of local mixed greens. Be sure to snoop around the front-of-the-house boutique. While Wisconsin-forward apparel is the draw, I recommend the apothecary items, like Shoyeido River Path incense—the aroma that sets the vibe at Trotter’s other project, Parlor Hotel.
